Yes, you can make this dish with ANY of your favorite white fish! See bottom of page for another great idea. (Blackened Fish Tacos)
Ingredients
2 Mahi Mahi filets 2 Tbsp Olive Oil Lemon juice 1 bundle of asparagus Blackening Seasoning
1 1/4 tsp Paprika
1 1/2 tsp Garlic powder
1 1/2 tsp Onion powder
1/4 tsp Cayenne Pepper
1 tsp Brown sugar
1 1/2 tsp salt
1 tsp pepper
Recipe
Mahi Mahi (or your favorite white fish!):
Combine all ingredients for the blackening seasoning.
Dry Mahi Mahi on paper towels. Completely cover each filet in the blackening seasoning.
In a cast iron pan (or non-stick pan), heat olive oil on medium heat.
When the oil is hot, add the filets to the pan. Cook 2-3 minutes on both sides. (For reference, cook until the sides are no longer opaque. Be careful not to overcook.)
Remove from pan. Serve with rice and asparagus, with a little squeeze of lemon juice.
Asparagus:
Preheat over to 375 degrees F.
Rinse the asparagus and snap the ends. They should naturally snap off where they are freshest!
Prepare a baking tray with non-stick spray. Place the asparagus across the pan in a single layer.
Drizzle with olive oil and sprinkle with salt.
Cook for 5-10 minutes, until bright green.
Remove from oven.
