It may look fancy, but it was VERY simple!
Ingredients
1 lb of Clams
Angel Hair Pasta
Parmesan Cheese
Mixed Italian Cheese (optional...gives the cheese flavor more depth!)
1 Lemon
Parsley
3/4 cup Chicken Broth
3/4 cup White Wine
1/2 cup Heavy Cream
1/4 of large Sweet Vidalia Onion
1/8 cup Minced Garlic
2 tbsp Butter
A Dash of Salt
Recipe
Cook the angel hair pasta and set aside.
Start by sweating the garlic and onions in the butter until translucent. Then add the clams. They won't open yet. This is to flavor the clams.
Allow the clams to infuse for about 1 minute, then pour in the broth and wine. Bring to a boil.
Once boiling, add heavy cream and cheese. At this point add a dash of salt (or however much you desire).
Turn the heat down to medium once the mixture begins to boil again. Stir until it becomes a nice sauce. Wait for all the clams to open up!
Once they are all open, turn off the heat so that you don't overcook the clams. Add the pasta.
Squeeze the juice of the lemon into the clam pasta. Allow the pasta to absorb the sauce by mixing for about a minute.
Let the mixture sit for another minute. You can sprinkle the pasta with parsley if desired.
