1Tbsp - 1 1/2 Tbsp Moroccan Spice Blend (I used Gourmet Spice Collection: Moroccan Blend.)
1/4 Sweet Yellow Onion
1/4 Large Green Pepper
1 1/2 Cups of Diced Potatoes (Cheat: Use frozen Ore-Ida Diced Potatoes)
1 Cup Frozen Peas (Must be frozen so they don't get mushy)
2-3 Tbsp Olive Oil (Will be split in recipe)
Salt
1 egg white for egg wash or 1 Tbsp of butter (last step in recipe)

The recipe makes about 9 turnovers.
Preheat oven to 425 degrees F.
Follow the thawing instructions on the Puff Pastry packet. Make sure it is room temperature before using.
In a large pan, heat 1 Tbsp of olive oil on medium-high. Once heated, place the ground turkey in the pan. Chop up the meat as finely as possible.
When the turkey is cooked, added potatoes, onions, peas and green pepper. Sprinkle with a couple dashed of salt. Mix all ingredients together in the pan.
Stir in 1 Tbsp of Moroccan Spice Blend. (The remaining 1/2 Tbsp can be added if you prefer a stronger flavor, But taste first!)
Add 1-2 more Tbsp of oil to add moisture to the mixture. The result should look like the picture!
Cover the pot to let the spices meld with the other ingredients. Do this for about 10 minutes. (Stir occasionally to prevent sticking if you are using a stainless steel pan!)
Next, remove the mixture from heat and pour into a bowl. Place the bowl containing the mixture in the freezer until it is cool. The mixture must be cold in order to place it inside of the puff pastry.
While the mixture is cooling, let's lay out our pastries. First, spray your baking sheet with Pam!
The puff pastry using comes in two large squares. Cut both sheets into 9 smaller squares. Stretch them slightly, to make the squares as large as possible. Place 9 of the small square evenly spaced on the baking sheet.
When the mixture is cooled, use an ice cream scoop to place an even amount of mixture in the center of each square.
Next, place the remaining 9 sheets on top of each. Using your hands, start on one side of the pastry and pinch all the way around until there are no holes left.
Place the pastry back on the sheet and use a fork to pinch the sides down one more time.
The last step is to brush the top with an egg wash or drizzle with melted butter!
Place in the oven for about 20 minutes until the pastry is a nice golden brown. Once removed from the oven, let them cool for about 5 minutes.
