Halibut:
2 pieces of Halibut
1/4 cup Melted butter
2 cups Pecans (coarsely chopped in food processor)
1 Tbsp Fresh lemon zest
1 tsp Dry mustard
1/2 tsp Cayenne pepper
1/2 tsp Dried thyme
1 1/4 tsp Salt
Slaw:
1 Red apple (diced small)
1/4 cup Diced yellow onion
Salt (a dash)
Pepper (a dash)
2 tsp Dijon mustard
3 Tbsp Apple Cider Vinegar
2 tsp White sugar
2 cups Coleslaw
1 Tbsp Olive oil
Recipe
Recipe makes 2 servings.
Preheat oven to 375 degrees F.
Halibut:
In a bowl, combine all ingredients EXCEPT the butter.
Dip the halibut in the butter, then dip in the pecan crust bowl. Pat the crust all over the halibut.
Prepare a sheet pan with non-stick spray. Place halibut on the sheet pan, Drizzle lightly with olive oil.
Bake in oven for 10-12 minutes. (Until the crust is browned.) Do not overcook!
Prepare slaw while the halibut is baking.
Slaw:
Heat olive oil in non-stick pan on medium heat.
Add the onions and apples to the pan. Cook until soft. (About 3 minutes.)
Reduce to medium-low heat.
Add slaw and the remaining ingredients to the pan. Stir and cook until slaw is hot but NOT soggy.
Remove from heat.
Serve and enjoy!
