Ingredients
Filling:
8oz Sour Cream
1 tsp Basil
1/2 cup Grated Parmesan cheese
8oz Cream Cheese
8oz bag of Monterey Jack Cheese
Cheese Sauce:
5 Tbsp Butter
1 Tbsp Minced garlic
2 1/2 cups Milk
1/2 cup Chicken stock
1 Tbsp Liquid crab boil
1/3 cup Flour
2 cups Mozzarella cheese
1/2 cup Grated Parmesan
(Optional 1 tsp salt, but it is already pretty salty with all the cheese!)
Spinach:
9 oz Bag of Spinach
Salt
1-2 Tbsp Olive oil
Seafood:
20-25 Medium Shrimp
10-15 Medium sized Scallops
1-2 Tbsp Tony Chachere's Creole Seasoning
Noodles:
9 Lasagna noodles
1/4 cup Liquid crab boil
2 Tbsp Olive oil
Recipe
Recipe makes 6-8 servings.
Preheat oven to 375 degrees F.
Boil a large pot of water.
Soak the noodles:
Prepare a baking dish, large enough to fit the lasagna noodles.
Place the lasagna noodles in the dish.
Pour boiling water into the dish and fill until the noodles are covered.
Add the liquid crab boil and olive oil to the dish and let it sit for about 30 minutes (or until it is time to layer the lasagna).
Make the filling:
Mix all the ingredients EXCEPT the Monterey Jack Cheese.
Set aside.
Season the seafood:
Chop the shrimp and scallops into small chunks.
Place in a bowl and mix in the creole seasoning until everything is well coated.
Prepare spinach:
Heat olive oil in pan.
Add spinach. Sprinkle with salt.
Cook until all spinach is wilted.
Drain any liquid and set aside.
Make the cheese sauce:
Make a roux beginning with the garlic and butter in a large pot on medium heat.
Once it is melted, add the flour and mix.
Pour in milk, chicken stock, and liquid crab boil.
Whisk until the sauce thickens.
When thick, remove from heat.
Add mozzarella and grated parmesan cheese. Mix well.
Layer your lasagna:
Prepare a lasagna pan with non-stick spray.
In the lasagna pan, add a layer of cheese sauce.
Place 3 lasagna noodles.
Add a layer of filling.
Add a layer of seafood.
Add a layer of Monterey Jack Cheese.
Add a layer of spinach.
Add 3 more lasagna noodles and repeat the previous 4 steps.
Add the last 3 lasagna noodles. Top with a layer of cheese sauce and Monterey Jack cheese.
Bake in oven for 35-45 minutes.
Remove from oven and rest for 15 minutes before serving.
