Ingredients
2 cups shredded carrots
1 cup whole cashews
1 cup shrimp
1 cup green peppers (chopped)
1/2 yellow onion (sliced into strips)
1/2 cup Soy sauce
1/4 cup Oyster sauce
1 Tbsp Fish sauce
2 Tbsp olive oil
Recipe
In a bowl, wisk together the soy sauce, oyster sauce, and fish sauce.
In a wok (or large non-stick saute pan), heat olive oil. Add shrimp to the pan. Cook and remove from pan.
Add onions to the pan and saute until clear. Add green peppers, and saute until they are soft.
Add cashews to the pan and saute for a few minutes until they are hot.
Add the sauce mixture, and carrots to the pan. Stir and cook for about 2 minutes.
Add shrimp to the pan and mix.
Remove from heat.
Serve with jasmine rice and ENJOY!
