1. Pat dry the salmon and cut a slit down the middle of the salmon. Sprinkle salt and pepper on top. 2. In a bowl, mix the spinach, feta cheese, and sun-dried tomatoes (with oil). 3. Stuff equal portions into each piece of salmon. Drizzle olive oil on top. 4. Cook in the oven for 25-30 minutes. Let the salmon rest for at least 5 minutes.
