1. Make the dough. Roll out or stretch it into a circle large enough to fit inside the entire cast iron pan. Set aside.
Heat 1 Tbsp of olive oil in the saute pan on medium heat. Dice 6 slices of bacon. Place in pan and cook until almost browned.
Remove hot Italian sausage from the casing and add to pan with bacon. Break up the sausage and cook with bacon until everything is fully browned. Remove from pan and set aside.
Chop mushrooms into small bite size chunks. Place mushrooms in the pan and saute for 2 minutes. Turn off heat. Add meat back to the pan and then pour in the pasta sauce. Add enough sauce to cover all of the meat and mushroom mixture but do not make it too saucy. (See pictures below)
Add 1 Tbsp of butter to cast iron pan. Place in oven for about 5-8 minutes until hot and the butter is melted.
Remove cast iron pan from oven and carefully place the dough inside.
Add meat and sauce mixture. Top with pepper jack cheese, then mozzarella, then provolone. Place pepperoni on the top layer of the pizza.
